Vegan Split Pea Soup
makes 4 - 6 servings Ingredients 1 medium onion, chopped 1 clove garlic, finely chopped 1 t. ground cumin 1/2 t. salt 2 T. tamari (optional) 2 1/2 cups dried split peas 1 med. yam, chopped 3 stalks celery, chopped 3 carrots, chopped
In large pot, saute' onion and spice in a bit of water to keep it from sticking (one or 2 mins). Add tamari,peas, and water. Bring to boil, reduce heat and simmer for one hour. Add vegetables and cook for an additional 30 mins. I usually keep the pot uncovered for the first hour and covered for the last half hour. It just depends how thick you like your soup. Directions for Pressure Cooker: (my preference -- it is much quicker, and also comes out perfect every time) Put onion, garlic, cumin, salt, tamari, and a bit of water in pot - saute' for a couple of minutes. Then add rest of ingredients, but use SIX instead of 8 cups of water. Bring to pressure (the high pressure setting if you have two pressure setting). Cook for 6 minutes.
