Jane's Vegan Lasagna

Ingredients

1 pkg. whole wheat lasagna noodles

1 pkg. firm tofu mixed with "2 eggs" (egg replacer powder)

1 jar organic spaghetti sauce mixed with 1 c. of water

mushrooms, sliced

spinach, steamed or a thawed box of frozen

onions, chopped and sauteed in water till translucent

grated carrots

* The vegetables listed are suggestions. You decide on the amount and types you want.

Directions

In a large baking dish (you may need two pans):

1. Spread a layer of sauce.

2. Lay in uncooked lasagna noodles.

3. Add a layer of the tofu mixture.

4. Add a layer of vegetables.

5. Repeat this procedure till pan(s) are full. Top with oregano, dried parsley, and ground pepper.

6. Cover with foil and bake according to directions on the lasagna box. Uncover for the last 15 minutes of baking, or longer if it's too watery.
