Vegan Gazpacho
makes 4 - 6 servings Ingredients 3 tomatoes - medium 1 medium green pepper 1 medium cucumber 1 jalapeno pepper 2 cloves garlic - medium 2 medium avocados 4 scallions 1/4 cup cilantro juice from 2 limes 3 C water freshly ground pepper pinch salt 1 Tbs. Freshly minced basil, or 1/2tsp. Dried basil Directions 1) Cut the tomatoes, pepper, avocados, and cucumber into chunks. Mince scallions. 2) Combine with all herbs, spices and other ingredients and water in large mixing bowl 3) We like 1/2chunky, 1/2pureed - so put 1/2in blender or processor to puree.
